- 5 catfish

- 1 tablespoon soy sauce
- Lemongrass, galangal to taste, crushed

. Seasoning Puree:
- 5 red onions
- 3 pieces of garlic
- 1/2 tsp pepper grains
- 3 candlenuts
- 3 devil's bird's eye chilies
- 5 curly red chilies

- a piece of turmeric
- enough shrimp paste.

. How to cook :
- Coat the catfish with salt and ground pepper, let stand for a while. Fry in lots of oil. Set aside.

- Stir fry the sliced ​​shallots briefly, add the ground spices, saute the spices until cooked and not unpleasant.

- Enter the bay leaves, lemongrass, galangal, lime leaves, whole bird's eye chilies, tomatoes, and water.

- Cook until the water boils, add the catfish, stir well. Season with salt, sugar, soy sauce and mushroom broth.

- Just before the fire is turned off, add the green onions and basil leaves. Sprinkle with fried onions
